Mix ALL the spices together in a bowl this is your rub.

Score the top of the pork shoulder (just cut shallow lines in a criss-cross pattern) — this helps it cook evenly.

Poke small slits all over and stuff garlic cloves in each one. Trust me, this is where the flavor lives.

Rub the spice mix all over the whole pork shoulder. Get in every corner!

Pop it in a sealed container and let it chill in the fridge overnight.

Day 2 (Cook It Low & Slow): Preheat your wood-fired oven (about 45 min)

Add oil to a Dutch oven, then toss in your chopped onions.

Place the pork in fat-side up, scored side up, and pour the lime juice over it.

Fill the rest of the pot with water, sprinkle in any leftover rub, and cover with the lid.

Cook in the oven at 300°F for 2–3 hours. Check on it now and then — add warm water if it's drying out.

Warm your tortillas on the oven floor and wrap in foil so they stay soft.

After ~3 hours the pork should be melt-in-your-mouth tender. It's ready!

Squeeze fresh lime over the pork, add a crack of pepper, and pile it onto your tortillas. - 14
Top with a simple slaw for crunch, plus scallions and cilantro.

Tips
While the pork is slow-cooking, throw a quick wood-fired cheese quesadilla in the oven as an appetizer nobody will complain about the wait!
