Low Carb Rhubarb and Strawberry “Jam” or Compote

Rhubarb basically has no calories or carbs so it’s great as a base. Adding chia seeds gives it a decent consistency and you can try and convince yourself they are strawberry seeds. You can make this without the strawberries, using same proportions, or with other berries. Or use it warm as a compote.

Chop rhubarb into short lengths and strawberries in half or quarters.

Add everything except chia seeds into a bowl and let the ingredients macerate for an hour or two. This will release some juices and you won’t need to cook as long. NB you do not need to add water.

Then heat gently just until the rhubarb has softened, so that it doesn’t stew, keeps its colour, and prevents the rhubarb breaking down.

Remove from heat, add chia seeds, leave to cool then put in a jar in the fridge overnight for the chia seeds to thicken. You may need to add more.
