Date and walnut cake is a classic, dense, and moist tea-time treat. It is typically made by soaking chopped dates in warm liquid (like water, milk, or hot coffee) to soften them, then combining the date mixture with flour, butter/oil, sweetener, and walnuts before baking.
Steps
- 1
In a vessel, combine the pitted dates, ½ teaspoon of baking soda, and 70 ml of water, and bring to a boil. Smash the boiled dates coarsely.
- 2
In another vessel, mix together the all-purpose flour (maida), walnuts, baking powder, baking soda, Milkmaid (condensed milk), and oil. Add the dates and water to this mixture and mix using cut and fold technique till you get a pouring consistency.
- 3
Place a stand in a heavy bottomed pot on the gas and heat it for 10 minutes with a lid on.
Take a 6" cake tin and line it with butter paper on all sides. - 4
Pour the above mixture into the cake tin and bake for approximately 45 - 60 minutes on gas.
- 5
Add walnuts, chocolate chips, almonds as required for toppings.
- 6
After 40 minutes, open the lid and insert a toothpick into the cake to check. If the toothpick comes out clean, turn off the gas, take out the cake and keep it covered for 5-10 minutes.
- 7
Once cooled, cut into pieces and serve with ice cream and chocolate sauce. Or eat as it is😋😋
