Ash Gourd Halwa (Petha Halwa)
Steps
- 1
Heat ghee in a pan. Add the grated petha and sauté for 3-4 minutes. Add the milk and saffron, mix well, and keep stirring for 8-10 minutes or until the grated petha softens.
- 2
Now, add the sugar and mix; let the mixture cook—stirring occasionally—until the sugar dissolves and the mixture thickens.

Next, add the mawa (khoya), pistachios, almonds, cashews, and green cardamom powder; mix well. Then, add the remaining ghee and stir until everything is thoroughly combined. Let it cook for another 4–5 minutes.

Now, turn off the heat, transfer it to a bowl, garnish with dry fruits and rose petals, and serve.
Tips
Adding mava gives it a wonderful taste.
