This is an Indian style savory waffles made with Sabudana (tapioca pearls). Crispy on the outside and soft inside, these waffles are a great alternative to the traditional Sabudana vada and Sabudana khichdi.
This waffle recipe is very similar to Sabudan Vada and Sabunda Khichidi, just that we cook them in waffles form. Takes minimal oil, very little monitoring and most importantly easy to make.

This waffle recipe is very similar to Sabudan Vada and Sabunda Khichidi, just that we cook them in waffles form. Takes minimal oil, very little monitoring and most importantly easy to make.

Rinse one cup of sabudana for 3-4 times to remove excess starch. Drain all the water and add 1 cup of water to the washed sabudana. Soak the sabudana in the water for minimum of five hours.After 5 hours, sabudana would puff up nicely and become soft. When you press a sabudana it should mash well.

Roast 1/2 cup of peanuts, cool it, remove the skin and grind them coarsely.

Boil 2 large or 3 small potato, peel the skin and grate it.

To the soaked sabudana, add the boiled potato, crushed peanuts, 1 teaspoon cumin seeds, 2-3 finely chopped green chilli, 1 teaspoon chilli flakes, 1 teaspoon grated ginger, a big handful of finely chopped coriander leaves, curry leaves, 1 teaspoons lemon juice, salt and black salt to taste.

Mix all the ingredients, and slightly mash it with your hands. The mixture should not be dry and stick together.

Divide the mixture into equal part and make round balls.

Preheat the waffle maker for 1minutes,
spray or brush some oil or butter on both side of the waffle maker. - 8
Take one of the balls and place it on the waffle maker. Press it gently.

Cook the waffle until it becomes crispy.
It may take 8-10 minutes. Once done, gently remove the waffle with a spatula, let rest for 1 minutes before serving it. - 10
Serve it with coriander chutney or sweet and spicy tomato sauce.
Enjoy savoury breakfast.
