My quick potato salad

Here’s a potato salad I made, inspired from the one at Din Tai Fung. It is perfect for a small side salad to accompany a main dish.
The potatoes and the dressing sauce are the main ingredients. The rest are up to you; feel free to experiment with different ingredients (tofu, seaweed, cucumbers, etc.).

Peel and cut the potatoes into thin strips.

Blanch the potatoes in boiling water for 1 minute. Drain and rinse in cold water.

In a bowl, mix the dressing sauce ingredients until combined.

Add the potatoes, as well as any other ingredients you wish. I added julienned carrots, nori, sesame seeds, spring onion, bean sprouts.

Mix well and serve cold. Enjoy!
