We love to eat the green tops in salads, broths and now in smothies.
Why? It doesn't in any way affect the produce and we get to harvest tops many times over.
Are they poisonous due to their high alkaloid content?
No, unless you devour them in ridiculous amounts.

Two more reasons we eat, drink and juice carrot top:
1. Higher mineral and vitamin content than the root; With minerals like potassium, magnesium, and calcium, as well as vitamin K and vitamin C, contains levels 6 times higher than that of the root.

2. Digestive support. The chlorophyll (the stuff that makes the leaves green) helps aid in loosening and cleansing the colon, while the fiber pushes out the accumulated toxic waste matter in order to promote better nutrient absorption and higher energy levels.
