A classic recipe for using up leftovers. With bits and pieces from here and there, we make delicious and nutritious vegan burgers.

Sauté the carrot, leek, and bell pepper. Let it cool.

In a food processor, lightly chop the walnuts without pulverizing them. Add the chickpeas and process again slowly so it doesn't become too smooth. Pour it into a glass bowl.

Once the vegetable sauté has cooled, add it to the mixture along with the spices and psyllium, and stir with a wooden spoon.

Form the burgers and place them on parchment paper on a baking sheet while preheating the oven to 350°F (180°C).

Once the oven is hot, bake them for about 20 minutes until they firm up a bit, then flip them and bake for another 15-20 minutes.

Let them cool and serve on a plate with a salad or in a hamburger bun with your favorite toppings.
