Peel your potatoes and clean them and chop them.

Fry your onions in a pan, add your chopped potatoes and stir them frequently to avoid sticking to the pan. Add a little salt to taste and also add your chopped tomato.

Add a little water to the potatoes, cover and let them cook.

Beat your eggs in a separate bowl, add them to the cooking potatoes and stir them frequently. Add black pepper and stir frequently.

Once ready, enjoy with a cup of low fat milk and Kachumbari.
