Make it an entree salad by serving the hot boats on top of a bed of spinach.

Preheat oven to 400 degrees F. Cook bacon in nonstick skillet according to package directions, and drain on paper towels, reserving the bacon grease in the pan. On medium-high heat, add the onion and sauté, stirring frequently for about 5 minutes, until soft.

Remove from heat. In a small bowl, crumble the bacon and mix in the tomato and onion. Sprinkle with thyme, and curry, and salt and pepper to taste. Use a spoon to stop out the seeds in your zucchini half, then fill with the bacon and veggie mixture, and sprinkle cheese on top.

Put in an ovenproof dish and bake for 20 minutes, or until cheese starts to bubble and brown.
