Wanted a quick sunday night dinner,had left over chilli con carne and plenty of eggs, so came up with the idea of a mixture of mexican eggs and nachos was great for a cold night.

Ingredients

4 servings
  1. 2 tbspolive oil
  2. 1onion, chopped
  3. 2cloves garlic crushed
  4. 1 tspsmoked paprika, cumin and dried oregano
  5. 1/4 tspcinnamon
  6. 1400gm tin crushed tomatoes
  7. 1/4 cupwater or stock
  8. 1leftover chilli con carne mix
  9. 1chili powder to taste
  10. 1salt and pepper to taste
  11. 8eggs
  12. 1bag of corn chips any flavor
  13. 1/2 cupgrated cheese
  14. 1advacado sliced and sour cream to serve

Cooking Instructions

  1. 1

    Pre heat oven 180degress celsius.Heat oil in fry pan cook onion and garlic till soft.

    Add spices and cook 1min then add chilli con carne, tomatoes and water and chilli powder bring to boil then simmer 10mins

  3. 3

    Pull pan off heat make holes in the sauce and crack the eggs into them,season eggs and scatter with grated cheese,arrange corn chips around the edge of pan,

    Bake in oven 10-12 mins until eggs are set pull out of oven.

    Top with sliced advacado, and sour cream and serve
