The basic idea behind the twist is that I like white pasta and my mother likes red pasta. To make bot h of us happy this recipe came up. :)
Steps

Make slit on the tomatoes to enable them to cook evenly.

Blanch the tomatoes in boiling water for 1 to 2 minutes.

Dump the tomatoes from boiling water into ice cold water to stop cooking process.

Peel the tomatoes and blend the tomatoes according to your choice (coarse or fine). Keep aside.

In a pan heat 1 tbsp oil. Saute the onion and garlic until translucent.

Add the tomato blend mixture and cook until reduced to half.

Add in the spices, tomato ketchup and sugar. Tear in some basil leaves. Cook for another 5 minutes.

Add in the mayonnaise and mix well until all gets combined.

Add in the boiled pasta. Mix well.

Cook covered for 2 minutes.

Serve hot with some grated cheese on top. Enjoy. :)
