Roast 2 poblano peppers. Once roasted, place them in a plastic bag to sweat (this makes them easier to peel).

Once roasted and peeled, wash them, remove all seeds, and cut into strips.

Sauté the chicken.

Add the onion.
- 5
Add the corn kernels, Mexican crema, poblano strips, and a pinch of chicken bouillon.

I don't use salt because the bouillon adds flavor.

Let it simmer for a few minutes and serve with white rice.
