The "real" version is made with crabmeat, but that's usually pretty expensive so I made it with crab sticks - and it was delicious.Don't overbeat the eggs, especially the egg whites.Cut all the solid ingredients up into the same size pieces. You can also try adding tofu, bean sprouts, Chinese chives and so on.Pour the egg mixture in one go into a well heated frying pan and mix immediately in order to give it a fluffy texture. Sweet & Thick Tamagoyaki (Rolled Omelette) Sweet & Thick Tamagoyaki (Rolled Omelette)
I adapted my mother's recipe to use shiro-dashi soy sauce. You can optionally add a little bit of regular soy sauce to taste.Cook the omelette over medium to low heat. There are two methods of starting a rolled omelette: the first is to have it gathered on one side from the start, while the other is to push the first batch of cooked egg to the edge of the pan. If you want the cross-sections to look pretty, have it rolled it up from the start.Adjust the amount of sugar to taste. Recipe by Yuuyuu0221 cookpad.japan -

Taiwanese Dried Radish Omelette Taiwanese Dried Radish Omelette
Taiwanese style dried radish omelette is also called Tsai Po Nan in Taiwanese. This is a fast and simple traditional home-style dish which I like to have with porridge, but you can certainly serve it with rice.Dried radish is made from turnip or daikon and has been preserved and sun-dried. It is usually salty and crunchy. You can get it at almost all Chinese markets like Ranch 99 in the dried vegetable section. There are many different brands and if you make enough of this dish, you will surely have one of your favorite brands to go to whenever you want to make this dish. One of those store-bought dried daikon radishes can last you for many months because you don’t need a lot to make one dish.Video Instruction: youtu.be/5yxrd_5oc4g Julie - Mrs. Lin's Kitchen -

A standard dish found in Taiwanese food stalls! Oysters are well known, but shrimp is also very popular! My husband doesn't like oysters, so I tried the shrimp version! It fills you up, but my family loves this.Be sure to cook the outside until it's golden brown and crispy! The outside will be crispy and the inside tender! Very delicious!Pour in and mix the starch mixture carefully to avoid forming lumps. Recipe by Mizorecchifan cookpad.japan -

Thai Omelette with Ramps (Ramp Kai Jiao) Thai Omelette with Ramps (Ramp Kai Jiao)
If you’re new to ramps, they’re a wild allium related to garlic, scallions, and leeks, and they’ve got a strong garlicky-onion flavor. Kai Jiao (Thai omelette) is the perfect canvas to let them shine. Ramps are native to the northeastern U.S. and only around for a short window, so if you spot them, this is a delicious way to put them to use. Kasey Coffey -
