Chicken Curry Buns

I had some home made brioche buns to use up and sprung the idea to try a quick chicken curry filling. Glad I took some photos and noted down the ingredients as it was delicious!

I had some home made brioche buns to use up and sprung the idea to try a quick chicken curry filling. Glad I took some photos and noted down the ingredients as it was delicious!

Gather your ingredients and combine all the *spice mix* spices together in a small bowl

Cook your canned tomatoes on a medium heat in a lightly oiled pan, add the *spice mix* and let this cook down for 5 minutes. Because it's going in a bun, we want this quite thick.

In another pan, gently cook your chicken pieces until cooked through and lightly browned

Then add the chicken to your spices and tomato sauce and cook for a further 2 or 3 minutes. For the last 30 seconds add in your chopped fresh cilantro

Load your bun with the curried chicken, top with sliced fresh tomatoes and serve! Delicious as-is, or goes great with a side salad of chilled lettuce and cucumber.
