In a pot, heat the olive oil and cook the onion until tender.

Add the vegetables and mix with the onion.

Add the tomato paste, black pepper and turmeric powder and mix.

Place the rice with vegetables and give it a mix

Add approximately 2 cups of water and cook in a high heat.

After 5-10 minutes lower the heat and cover the lid for 15-20 minutes.
