Kibbeh Darawish (Aleppo-Style Kibbeh)

Season the bulgur with spices and salt, then soak it in cold water for up to 1 hour (depending on the type of bulgur).

Grind the bulgur and onion together in a meat grinder two or three times. On the last round, add the lean beef and the beaten egg.

Knead the dough by hand until it becomes cohesive.

Shape the dough by hand, with a rolling pin, or using a mold attached to a meat grinder.

Fill the kibbeh, then fry in hot oil until golden and cooked through.

To freeze, fry the kibbeh halfway, let cool, arrange on plates, wrap tightly in plastic wrap, and store in the freezer.
