  9. 12White pepper
  10. 4 piecesGinger
  11. 1Rodo
  12. 5 piecesGinger
  13. 2 kgTatasi
  14. 2 kgChicken

Steps

    Method: Blend tomatoes rodo, onion, ginger and far as he together, put enough ginger, enough that you can smell it in the mix

    Boil the mixture above untill all the water evaporates.

    Parboil the rice.

    Pour oil in a pot, dice in some onions and fry till its saute, add the boiled pepper mix above and allow to fry well in the oil Add seasoning cubes, curry, thyme and white pepper. Keep frying

  5. 5

    Check on the stew u re trying, by now it should have an orangy color instead of the red color,

  6. 6

    Wash the parboiled rice thoroughly and add to the fried stew, stir, add ur meat or chicken stock

  7. 7

    Add little water, just enough to cover the rice; u should still be able to see the rice grains through the liquid.Stir well, and allow to cook

    Check again, taste now to see if the seasoning is OK, you may need to add one or 2 more seasoning cubes, blend ginger and add to the pot of rice, more white pepper too. Stir and cover with nylon do the rice can steam to perfection.Allow simmer for extra 10-15mins.food is ready.

    The rice will begin may begin to burn, do not fret, that S what gives Jollof that smokey burnt taste/aroma. Just make sure the heat is turned on low.
