Combine seasonings….set aside

Melt butter in 2 quart pan, brown smoked meat, then add chicken and cook until chicken is brown.

Stir in 1/2 of the seasonings and 1/2 of the chopped vegetables.

Cook veggies until tender (5-8 minutes).

Add tomato sauce - cook for 1 minute.

Add remaining seasoning (as desired. it can get spicy), veggies and diced tomatoes

Stir in stock and rice. Pour into ungresed 8x8 baking pan. Do not cover and back 1 hour at 350 degrees.
