Ingredients

  • ******** Seasoning **********
  • 2whole bay leaves
  • 2 tspcayenne pepper
  • 1.5 tspsalt
  • 1.5 tspwhite pepper
  • 1 tspdried thyme
  • 0.5 tspblack pepper
  • 1/4 tsprubbed sage
  • ******** Everything else **********
  • 2 tbspunsalted butter
  • 1/2 lbandoulie sausage
  • 3/4 lbdiced boneless chicken
  • 1 cupcelery
  • 1 cuponions
  • 1 cupgreen bell pepper
  • 1 tbspminced garlic
  • 1/2 cupcanned tomato sauce
  • 1 cupdiced tomatoes
  • 2.5 cupschicken broth

Steps

  1. 1

    Combine seasonings….set aside

  2. 2

    Melt butter in 2 quart pan, brown smoked meat, then add chicken and cook until chicken is brown.

  3. 3

    Stir in 1/2 of the seasonings and 1/2 of the chopped vegetables.

  4. 4

    Cook veggies until tender (5-8 minutes).

  5. 5

    Add tomato sauce - cook for 1 minute.

  6. 6

    Add remaining seasoning (as desired. it can get spicy), veggies and diced tomatoes

  7. 7

    Stir in stock and rice. Pour into ungresed 8x8 baking pan. Do not cover and back 1 hour at 350 degrees.
