I hate when you look up recipes online and you are given names of recipes that it's hard to reach. E.g. Heavy cream etc. I love this recipe so much because it's made with readily accessible Nigeria ingredients. Chocolate cake is my all time favourite.

1. Preheat oven to 350º F/ Gas Mark 4/180ºC.

Prepare two 9-inch cake pans by lining with baking sheets.

Add flour, sugar, Oluji cocoa powder, baking powder, baking soda, salt and coffee powder to a mixing bowl or the bowl of a cake mixer. Whisk through to combine or, using your paddle attachment, stir through flour mixture until combined well.

Add liquid milk, vegetable oil, eggs and vanilla extract to flour mixture and mix together on medium speed until well combined. Reduce speed and carefully add boiling water to the cake batter until well combined.

Share cake batter equally between the two cake pans or put in cupcakes liners. Bake for 30-35 minutes, until a toothpick or cake tester inserted in the centre comes out clean.

Remove from the oven and allow to cool for about 10 minutes, remove from pan and cool completely.
