I always find chicken curry in every occasion that Fiji Indian hold. Fiji Indian chicken curry taste totally different from Indian chicken curry. It taste nice. One of my husband's favourite curry. Ingredients

1 hour
  • 1/2chicken (cut into small pieces)
  • 3small potatoes (peel and cut each into 4)
  • 2onion medium size (thin sliced)
  • 3 cmginger (pound)
  • 1whole garlic (pound)
  • 5chilli (pound)
  • salt
  • 1 tspfenugreek
  • 2 tspcumin seeds
  • 1/2tsb clove
  • 1small cinnamon stick
  • 1 tspcardamon pods
  • 1,5tomatoes (chopped)
  • leavescurry
  • 1 tbsmeat masala
  • 1 tspturmeric powder
  • leavescorriander (chopped for garnish)
  • water
  • cooking oil (some people use ghee/purified butter)

Steps

1 hour
  1. 1

    In a hot oil, fry fenugreek, cumin seeds, clove, cardamon pods and cinnamon stick

    Add onion fry until smooth

    Add ginger, garlic, chilli, salt (pound it)

    Add tomatoes and curry leave, it should become a paste after stiring around 10 minutes

    Put meat masala and turmeric powder, stir it

    Put chicken and potatoes

    Add water, the cook until the water becomes thick (the pic I put above on the display). check the taste, add salt if needed. garnish with chopped corriander leave.

    Serve with roti/paratha/rice
