Beetroot thoran (Kerala style)

This is a traditional kerala dish, which has all the goodness of beetroot, fire of green chili and soothing touch of fresh coconut !! It is best served with steaming rice and sambar/ dal .

Grind grated coconut, green chilies and turmeric powder together, if you are using dry coconut soak it in water before grinding.

In a pan over medium heat, add oil for tempering. When oil is hot add mustard seeds. After the mustard seeds have spluttered add chopped onion and beetroot. Saute it for a few min then add ground coconut paste.

Add salt, mix well. Keep it on medium flame till beetroot is cooked. Do not let it stick to the bottom.

Serve it with steaming rice and dal or sambar.
