Ingredients

  1. 4cobs of sweet corn,2 cobs grated and 2 cobs peeled
  2. 1 piececarrot, diced small pieces
  3. 2 stalksgreen onion, finely chopped chopped
  4. 4 tablespoonplain flour
  5. 2 tablespoonrice flour
  6. 1 clovesred onion, or 3 cloves shallots
  7. 2 clovesgarlic
  8. 1 teaspooncoriander seeds,toasted
  9. salt pepper
  10. chicken powder
  11. vegetable oil

Steps

  1. 1

    Blend red onion,garlic and coriander seeds with salt,pepper and chicken powder with 1 cup of water until smooth

  2. 2

    Put grated corn,peeled corn,diced carrot and chopped green onion in a bowl,pour the blended onion, and add on plain flour and rice flour mixed them well like a batter.

  3. 3

    Put vegetable oil in a pan with high heat, then deep fry until corn fritter cooked in golden brown

  4. 4

    Tips : make sure the oil is hot before you deep fry the fritter,so it doesnt absorb alot of oil. final result fritter will be chruncy and not oily. serve with hot chilli. superb!!!
