Ingredients

  1. 3 cupscoarse semolina flour (about 480 grams)
  2. 2 cupswhole milk yogurt (about 300 grams)
  3. 1/2 cupghee (store-bought versions often use clarified butter)
  4. 1 tablespoonbaking powder
  5. For the syrup:
  6. 2 cupssugar (about 400 grams) for every 1 1/2 cups water (about 360 ml)
  7. 1/2lemon

Steps

  1. 1

    In a bowl, combine the semolina flour and ghee. Mix as shown in the picture until the semolina is fully coated.

    Add the yogurt and baking powder last, since semolina has a high gluten content.

  3. 3

    Let the mixture rest for 2 hours so the ingredients can blend together.

  4. 4

    After pouring the batter into the baking pan, tap the pan firmly on the counter to even out the surface and prevent cracks. Decorate with peanuts if you like.

  5. 5

    Bake at 350°F (180°C) until cooked through.

  6. 6

    Pour the warm syrup over the hot basbousa.

  7. 7
