Easy roast chicken

Becky
Becky @beckyr

Of all possible roasts, I find roast chicken is the most versatile because it has that convenient hole to stuff with all sorts of fruits, nuts, herbs and veg. that can combine with the meat to yield different flavours. Last weekend I decided to let fresh sage do the talking - its flavour goes so well with chicken and I had a big bunch. Even though the photo isn't a work of art (if it is possible to make a roast chicken look attractive I certainly haven't found the way yet..) the result was delicious.

Steps

120 mins
  1. 1

Wash the chicken and pat dry with a couple of pieces of kitchen towel. Put the chicken in the roasting tin. Wash and peel the onion and apple, cut into chunks and stuff the chicken.

  2. 2

Wash the sage. Stuff some of the sprigs into the hole with the onion and apple. Chop the rest and mix with the butter (it needs to be really soft), salt and pepper. Rub the chicken all over (best way to do it is with your hands). Then holding one of the legs, put the chicken in a vertical position and pour the wine into the hole gently so that it waters the onions, apples and sage and reaches the other end. Gently put it back down on the tin, taking care so that the wine doesn't leak out. Put in the oven at 200º for 2 hours aprox. (depending on the size of the chicken).

  3. 3

When the chicken looks done, prod the place where the leg meets the body with a prong. If the juices that come out are clear, the chicken is done. If they are murky, it needs a little more time.

  4. 4

Put the chicken on a carving dish and let it rest for 10 minutes. Use the juices in the pan to make some gravy. Enjoy!!

Born in the UK, I came to Spain after graduating many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. My recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal - I prefer buying fresh local produce as much as possible. When I have time, I love spending a few hours cooking, filling my kitchen with delicious smells and great music and then hosting family and friends for long happy meals, laughs, conversation and chilled white wine. I'm a great believer in the power and value of home cooking for our own health, happiness and wellbeing and those of our loved ones and since I joined the Cookpad team 11 years ago I am committed to helping to make everyday cooking more fun for people all over the World. You can see more recipes (in Spanish) on my Cookpad Spain profile here: https://cookpad.wasmer.app/eng/users/1089227
