Matumbo with fried cabbage

This happens to be one of my favorite dishes in the kitchen hence cook it whenever i get an opportunity. Due to its complexity however it requres total attention in both preparation and cooking.

This happens to be one of my favorite dishes in the kitchen hence cook it whenever i get an opportunity. Due to its complexity however it requres total attention in both preparation and cooking.

The matumbo should be rinsed throughly.

Its best prepared using a jiko therefore the jiko should be ready

Place the cooking pot with matumbo in it on the jiko and give it time to boil until tender. (two jars of water should be enough)

In a different pot heat it with oil then add chopped onions
- 5
When the onions are almost golden brown add diced tomatoes together with green pepper diced into tiny pieces
- 6
Allow the tomatoes to cook until tender then add 1 cup of water
- 7
Add tomato paste along with the matumbo then stir to mix.

Add chill and salt

Add 2 cups of water for soup if necessary.

Allow the soup to thicken before removing the pot.

Serve hot with chapati and fried cabbage.
