Cold Lentil and Salad Dish

I don't like eating soups in the summer. So, I'm looking for ways to enjoy legumes in a cooler way. Last week, we had a lentil salad at a tavern that we loved, so today I improvised to make a similar dish. It can be eaten as a main dish on a hot afternoon or served as a salad. And of course, you can add a bit of onion, either fresh or dried.

Boil the lentils in plenty of water. If you like, add a bay leaf to the water. Let them cook for 20-30 minutes until they are done but not mushy. They should be soft but firm. Rinse, drain, and set them aside.

Cut the tomatoes, cucumber, and feta cheese into small pieces.

Mix all the dressing ingredients well.

In a large bowl, combine the lentils with about 3/4 of the dressing. Then add the tomatoes, cucumber, feta cheese, and olives on top. If desired, sprinkle a little extra salt on the salad. Add the olives and a bit of oregano. Pour the remaining dressing over the top, and the dish is ready!
