Ingredients

30 minutes
Makes 30-50 zucchini fritters
  1. 2.2 lbszucchini (about 1 kg)
  2. 1 1/2 cupsshredded cheese of your choice (about 12 oz or 350 grams)
  3. 3bell peppers (any kind you like)
  4. 1onion
  5. 3eggs
  6. Fresh parsley (as much as you like)
  7. Dried oregano
  8. Fresh dill (at least half a bunch)
  9. as neededBreadcrumbs,
  10. Salt
  11. 1little olive oil

Steps

30 minutes
  1. 1

    Grate the zucchini raw or chop in a food processor for convenience. Let them drain for at least 1 hour.

  2. 2

    Blend the bell peppers, onion, and all the herbs in a food processor, then add them to the zucchini.

  3. 3

    Mix everything together and add the eggs. Gradually add breadcrumbs until the mixture forms a pliable dough.

  4. 4

    Let the mixture rest in the refrigerator for 1 hour.

  5. 5

    Add 1-2 tablespoons of olive oil and knead again.

  6. 6

    Shape the mixture into fritters and coat them with breadcrumbs.

  7. 7

    Place the fritters on parchment paper and bake with convection at 350°F (180°C) for 20-30 minutes. Enjoy!
