Ingredients

30 minutes
Makes 30-50 zucchini fritters
  • 2.2 lbszucchini (about 1 kg)
  • 1 1/2 cupsshredded cheese of your choice (about 12 oz or 350 grams)
  • 3bell peppers (any kind you like)
  • 1onion
  • 3eggs
  • Fresh parsley (as much as you like)
  • Dried oregano
  • Fresh dill (at least half a bunch)

  • Salt
  • 1little olive oil

Steps

  1. 1

    Grate the zucchini raw or chop in a food processor for convenience. Let them drain for at least 1 hour.

  2. 2

    Blend the bell peppers, onion, and all the herbs in a food processor, then add them to the zucchini.

  3. 3

    Mix everything together and add the eggs. Gradually add breadcrumbs until the mixture forms a pliable dough.

  4. 4

    Let the mixture rest in the refrigerator for 1 hour.

  5. 5

    Add 1-2 tablespoons of olive oil and knead again.

  6. 6

    Shape the mixture into fritters and coat them with breadcrumbs.

  7. 7

    Place the fritters on parchment paper and bake with convection at 350°F (180°C) for 20-30 minutes. Enjoy!
