Ingredients

  • 18 oz. (500 grams)assorted shredded cheese or kefalotyri cheese
  • 1 1/2 packagesNo. 3 pasta (about 24 oz. total)
  • Butter
  • Ground beef
  • 1.6lbs. (750 grams) ground beef
  • 1large onion, finely chopped
  • Olive oil
  • 2fresh tomatoes, finely chopped
  • 1 cantomato sauce (use any plain tomato sauce, about 14 oz./400 grams)
  • Salt
  • Pepper
  • Nutmeg
  • 2 cupswater (480 ml)
  • 1small wine glass red wine (about 1/3 cup or 80 ml)
  • Béchamel sauce
  • 7-8 tablespoonsflour (about 60-70 grams)
  • 1 stickunsalted butter (or equivalent)
  • 4eggs
  • 1 canevaporated milk (about 12 oz./350 ml)
  • 1 canwater (use the empty evaporated milk can to measure)
  • 10.5 oz. (300 grams)cheese (taken from the 18 oz. shredded cheese above)
  • Salt
  • Pepper
  • 1 teaspoonnutmeg

    Boil the pasta in salted water until al dente.

  2. 2

    Drain the pasta in a colander and rinse with cold water.

  3. 3

    Add 2 tablespoons of butter to the pot, return the pasta, and stir to coat evenly. Let cool.

  4. 4

    Prepare the meat sauce: Heat olive oil in a pot and sauté the onion and ground beef.

  5. 5

    Add the fresh tomatoes, tomato sauce, salt, pepper, nutmeg, and 2 cups water. Simmer for about 40 minutes, until the liquid is absorbed. Just before removing from heat, add the red wine. Let cool.

  6. 6

    For the béchamel: Melt the butter in a saucepan and add the flour, stirring constantly over medium heat to make a roux.

  7. 7

    While stirring, gradually add the evaporated milk, water, eggs, salt, pepper, nutmeg, and finally the shredded cheese. Once thickened, remove from heat and let cool.

  8. 8

    Preheat the oven to 350°F (180°C).

  9. 9

    Spread 3/4 of the pasta evenly in a buttered baking dish. Sprinkle with cheese (use 7 oz./200 grams of the reserved cheese).

    Add all of the meat sauce.

    Top with the remaining pasta and sprinkle with a little more cheese.

    Pour the béchamel sauce over the top and sprinkle with the remaining cheese to create a golden crust and add flavor.

    Bake for about 1 hour at 350°F (180°C).
