Beat the butter and sugar in a mixer until light and fluffy. Add the egg whites first, then the yolks.

Add the vanilla, baking powder, cinnamon, and salt, then gradually mix in the flour.

You should have a dough that doesn't stick. Wrap it in plastic wrap and refrigerate for 10 minutes.

Roll out the dough with a rolling pin to about 1/4 inch (0.5 cm) thick. Use cookie cutters to cut into your favorite shapes.

Place the cookies on a baking sheet lined with parchment paper and sprinkle with coarse sugar.

Bake in a preheated oven at 400°F (200°C) for about 20 minutes.
