Ingredients

Serves 6-8 servings
  1. 8 stripsbacon, chopped
  2. 5-6large potatoes, boiled and cut into pieces
  3. 1/2 cupcelery, finely chopped (about 60 grams)
  4. 1/4 cupgrated Parmesan cheese (or similar hard cheese, about 25 grams)
  5. 2green onions, finely chopped
  6. 1/4 cupdill pickles, finely chopped (about 35 grams)
  7. 1/2red bell pepper, diced
  8. 1/2green bell pepper, diced
  9. 2-3 tablespoonsparsley, finely chopped
  10. Salt and freshly ground black pepper
  11. Dressing
  12. 4 tablespoonsolive oil (about 60 ml)
  13. 2 tablespoonsvinegar (about 30 ml)
  14. 2 tablespoonsmayonnaise (about 30 grams)
  15. 3-4 tablespoonslemon juice (about 45-60 ml)
  16. 1 tablespoonmustard (about 15 grams)
  17. 7 ozcream cheese or similar (about 200 grams)

  1. 1

    Place the bacon in a skillet over medium heat and sauté until golden and crispy. Transfer to a paper towel-lined plate to drain any excess fat.

    In a bowl, combine the potatoes with the sautéed bacon and the next 8 ingredients.

  3. 3

    Add the dressing ingredients to a mixer and blend for 1 minute until smooth.

  4. 4

    Pour the dressing over the potato mixture and gently toss to coat evenly.

  5. 5

    Transfer the mixture to a ring mold or bundt pan. For easy removal, line the mold with plastic wrap before adding the salad.

  6. 6

    Refrigerate the salad for several hours or overnight to set.

  7. 7

    Invert onto a serving platter, carefully remove the plastic wrap, and garnish the potato salad with strips of red bell pepper arranged like rays.

  8. 8

    For extra color, you can add greens such as curly leaf lettuce or endive around the salad.

Με λένε Ρούλα.Δεν ήξερα τίποτα απο μαγειρική εκτός απο κάποια πολύ βασικά και χωρίς μεγάλη φαντασία.Τα τελευταία χρόνια χάρη στις εκπομπές μαγειρικής και σε site σαν κι αυτό βελτιώνομαι συνέχεια.Χαίρομαι που έγινα μέλος αυτής της μεγάλης παρέας.Λατρέυω την μουσική,ειδικά την rock & hevy metal.Εκτός λοιπόν απ'το τσουκάλι κατά διαστήματα ασχολούμαι και με μαθήματα μουσικής.
