Wash the cucumbers and grate them on the large holes of a box grater (do not peel). Place a strainer underneath to catch the excess liquid.

Crush the garlic cloves with salt in a mortar and pestle until smooth.

Transfer the yogurt to a large bowl. Add the grated cucumber (squeeze out all the liquid with your hands), the garlic, a little vinegar, and olive oil. Mix well.
