Beat the oil, grape must, honey, sugar, and water together for 5 minutes with a whisk or mixer until the sugar dissolves.

In a separate bowl, mix the flour with the baker's ammonia, baking soda, cinnamon, cloves, and cocoa powder.

Add the wet ingredients to the flour mixture. Knead until the dough is smooth and well combined.

Shape the dough into cookies and place them on a deep baking pan lined with parchment paper. Cover the cookies with aluminum foil or, if your pan has a lid, use that to cover them.

Bake for 15 minutes at 350°F (180°C) using the convection setting. Check once during baking, as oven temperatures may vary.

When you remove them from the oven, let them cool, then store them in a plastic bag or a cookie tin to keep them soft.
