Ingredients

24 Minutes
  • 6 1/2 cupsall-purpose flour (about 800 grams)
  • 1 1/4 cupssugar (about 250 grams)
  • 1 tablespoonbaker's ammonia (about 15 grams)
  • 2 1/2 teaspoonsbaking soda (about 12 grams)
  • 1 1/2 tablespoonsground cinnamon (about 12 grams)
  • 2 teaspoonsground cloves (about 5 grams)
  • 2 tablespoonsunsweetened cocoa powder (about 10 grams)
  • 2/3 cupvegetable oil (about 150 ml)
  • 3/4 cupboiled grape must (about 200 ml)
  • 1/3 cuphoney (about 100 ml)
  • 3/4 cupwater (about 180 ml)

Steps

    Beat the oil, grape must, honey, sugar, and water together for 5 minutes with a whisk or mixer until the sugar dissolves.

  2. 2

    In a separate bowl, mix the flour with the baker's ammonia, baking soda, cinnamon, cloves, and cocoa powder.

  3. 3

    Add the wet ingredients to the flour mixture. Knead until the dough is smooth and well combined.

  4. 4

    Shape the dough into cookies and place them on a deep baking pan lined with parchment paper. Cover the cookies with aluminum foil or, if your pan has a lid, use that to cover them.

  5. 5

    Bake for 15 minutes at 350°F (180°C) using the convection setting. Check once during baking, as oven temperatures may vary.

  6. 6

    When you remove them from the oven, let them cool, then store them in a plastic bag or a cookie tin to keep them soft.
