I make this every morning - it's really quick and a nice healthy start to the day.
Steps

Heat the oil in a pan

Whisk the egg and whites thoroughly

Pour into pan on a medium heat and cook for a few minutes

Use a spatula to carefully turn the omelette
- 5
Add you cheese across one half on the omelette
- 6
When the bottom is crisp add your spinach leaves and fold the omelette in half in the pan
- 7
Fold again and serve!
