Quite a delicacy appropriate for breakfast the way it holds down you stomach.
Steps

Wash the arrow roots thoroughly then peel and wash again.

Add about 500ml water to a pan then add the peeled nduma to the pan,cover with lid and heat using moderate heat.

The goal of step 2 is to make sure the nduma is tender, for this step one can check for tenderness if not ready add water and salt. NB cover to utilise steam.

Prepare the eggs and beat them to mix the egg white with the yolk.

When the arrow roots are ready slice them to small round pieces and soak in the raw mixture for a minute.

Add the cooking oil to a pan and use moderate heat for the frying.

Add the soaked sliced to heated cooking oil and ensure there is a layer of cooked egg on the whole surface of the slices. When ready remove from oil and spread on a plate for it to dry.

Serve and enjoy with your favourite beverage.
