Steps

Sauté the onion, coarsely cut, in 4 tbsp of oil. Add the sugar so it caramelizes.

Cut the potatoes into small pieces and add them to the sautéed onion to sauté a little as well.

Then add the peppers that you have already finely chopped and continue to sauté.

Add the spices, the rest of the olive oil, the parsley, the dill and the spearmint

And mix.

Add the okra to the mixture.

Move the sautéed mixture into a terracota casserole dish, dissolve the tomato paste in 1 1/2 cup water, add it to the rest and mix well.

Cover with the lid, place in a preheated oven to 200°C and bake for about 40 minutes. Let it cool, then serve.
