Ingredients

  1. For Lamb Chops
  2. 1frenched rack of lamb, cut into double chops
  3. 2 tablespoonsolive oil, I used chili infused
  4. juice of one lemon
  5. 2 tablespoonssour cream
  6. 1/2 teaspoon each, salt and pepper
  7. 2garlic cloves, minced
  8. 2 sprigsfresh rosemary, 1 tablespoon each. chopped chives, basil and parsley
  9. For Couscous
  10. 1 cupuncooked plain couscous
  11. 1 cupchicken broth
  12. 3 tablespoonheavy cream
  13. 1 tablespoonbutter
  14. 1/4 cupchopped red onion
  15. 3garlic cloves, minced
  16. 1/4 cupchopped fresh tomato
  17. 1/4 cupfresh grated parmesan cheese
  18. 1 tablespooneach, fresh chopped basil, chives and parsley
  19. to taste salt and pepper
  20. For Garnish
  21. fresh whole grape or cherry tomatoes
  22. Parsley

Cooking Instructions

    Combine lamb chops with all the ingredients listed for the lamb. Rub mixture all over meat. Let rest at least 15 minutes or up to 8 hours. Refrigerate if it will be over 30 minutes. Bring to room temperature before grilling.

    Grill chops over direct heat, turning to cook all sides until done to how you like yor lamb cooked. For medium rare the total cooking time is about 10 minutes.

    Make Parmesan Garlic Herb Couscous

    In a saucepan, melt butter, add onion, garlic and tomato, season with salt and pepper and cover and cook on low until tender about 5 minutes.

    Add chicken broth and cream and bring to a boil.

    Add couscous and parmesan cheese stir, turn off heat cover tightly and let sit 5 minutes

    Add herbs and stir in.

    Serve couscous with lamb chops.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her.
