Okra with tomatoes in the oven

Okra is a very particular food. Not many people like them because of their texture. I belong to those people! I tried to think of various ways to have them (because when my mom made them I used to eat only the ones on top that were crispy and not juicy!). So, after a some searches on the internet and some advice from my mom, I decided on the following recipe.

Spread out the okra in the baking tray.

Salt them and sprinkle with the vinegar. (Be careful to not sprinkle too much vinegar because then the okra will be sour!! Just enough to get them a little wet).

Bake in a preheated oven to 200°C (not using the fan) for 20 minutes (stir them a little after 10 minutes).

Then, start preparing the sauce. Heat the oil in a pot.

Finely chop and sauté the onion.

Add the tomatoes, the tomato paste and stir.

Then add the allspice, the pepper, salt, paprika, parsley and mix well.

Finally add a little water and let it boil over low heat.

When it is ready pour it on the baking tray with the baked okra and mix.

Place the baking tray in the oven and bake for half an hour at 180-170°C, without using the fan. (Check the liquids in case it needs a little additional water).
