Although this recipe calls for spinach, my favorite way to fix this dish is substituting the spinach for 2 (10 oz) packages of broccoli.
Steps

Cook spinach according to package directions. Drain.

Spoon into shallow casserole dish.

Sprinkle spinach with salt, onion, 2 Tablespoons melted butter, and 1/4 cup grated cheese.

Saute' mushrooms in 4 Tablespoons of butter, and then spoon mushrooms over the cheese layer.

Sprinkle with garlic powder and top with 1/2 cup cheddar cheese.

Bake 20 to 25 minutes in a 350°F oven.
