Trahana (cous-cous-like dry paste with dairy) in a red sauce. If you don't like milk or yogurt and you want to try something different. Simply and quickly!

Place the oil into the pot and sauté the onion over strong heat.

As soon as it starts to change color add the trahana and mix for 1/2 - 1 minute. Stir in the wine.

Add the water, the tomato and the rest of the ingredients (sugar, salt, paprika, parsley, cinnamon) except the pepper.

Turn down the heat and let it boil until all the liquids are absorbed (for about 10') stirring often.

Season with freshly ground pepper and serve.
