Clean the octopus thoroughly, remove the skin of the head (pull it loose), wash it and place it in the pot on its own.

Place over medium heat so that the octopus lets out its liquids, turning it over a couple of times.

When the juice that the octopus lets out is absorbed add the peppers and the wine into the pot as well as the bay leaves and the oregano and let everything boil over medium heat.

Half an hour later add the oil and let the octopus simmer until it is cooked.

When it is tender enough and the sauce thickens the octopus is ready.

Let it cool, pour the sauce over it, garnish with finely chopped parsley and enjoy...
