  1. 2 cupsdried chickpeas, soaked overnight in water with 1 teaspoon baking soda (about 400 grams chickpeas, 5 grams baking soda)
  2. 4 tablespoonstahini
  3. Juice of 1 lemon
  4. 2 clovesgarlic, minced
  5. Salt to taste

    Drain the soaked chickpeas and place them in a pot over high heat. Add water and cook for 30 to 50 minutes until tender.

    Remove the cooked chickpeas from the heat, drain them, and set aside the cooking water. Place the chickpeas in a blender or food processor.

  3. 3

    Blend the chickpeas until you get a smooth, soft paste.

  4. 4

    In a bowl, combine the tahini with 1 tablespoon of the reserved cooking water. Add the minced garlic, lemon juice, and 1 teaspoon salt. Mix well until you have a smooth, white sauce.

    Add the chickpea paste to the bowl and mix thoroughly.

  6. 6

    Add more lemon juice and salt to taste, if desired.

  7. 7

    Transfer the hummus to a serving dish. Garnish with mint leaves, ground cumin, or a few whole cooked chickpeas.

أنا لبنانية وعشت دايماً ببيروت بس بفضل الأكل السوري، لانو تعودت عليه بالبيت، لانو امي سورية وطبخها كتير طيب. كتار بيفكروا انو الأكل اللبناني والسوري نفس الشي، بس هيدا مش مظبوط. امي بتطبخ بعض الطبخات السورية يلي ما بتلاقوهن الا عند السوريين. عندي بعض وصفاتها، وبحب جربها اوقات لانو كل يلي بيدوقها بيحبها.كمان عندي مرت خيي مغربيّة، وهيي علمتني بعض الوصفات التي نشرتها على "شهية"، لاني بعتقد انو شي لذيذ انو نتشارك وصفاتنا مع غيرنا ونجرّب أكلات جديدة.كمان غير الطبخ، بحبّ كتير الاكل، والقعدة ببيروت كتير بتساعد بهيدا الشي، لانو المطاعم ببيروت هي عنجد أفضل مطاعم...ما أحبّ طبخه:الصيادية والفريكة مع لحم الغنم
