The taste of this rice takes me back to my village in Rwathia. In the season of the rains when pumpkins were in plenty, the rice was a delicacy we all looked forward to.

Prepare your pumpkin by peeling it and slicing it to small cubical sizes.

Saute your onion untill well cooked to light brown colour.

Add your chopped tomatoes, salt and any seasoning that you may like.

Add your pumpkin pieces stir them well and let cook for 5 minutes.

Add two cups of water and bring them to boil.
- 6
Clean your rice well and add it in. Stir well and let it simmer in low heat.

Enjoy with some veges.
