Githeri is a Kikuyu dish that is being eaten all over Kenya. It is rich in both proteins and carbohydrates. Enjoy my dish.
Steps

Stir fry onions and garlic with oil till golden brown. Then add tomatoes and capsicum.

Let it cook till totally mixed. Add carrots then Githeri. You can add royco if you want.

Stir the mixture well them add a pinch of salt with little water. Let it cook for 10-15 mins then remove from heat.

Cook rice and the serve together.
