Ginger Apple preserves from the settlement cookbook -1965
Cooking Instructions

Wipe, pare, quarter, core and cut the apples into small cubes.

Boil water, sugar and lemon juice 5 minutes or until clear, add the lemon rind, apples and ginger root and cook slowly 2 or more hours until thick and brown. Poor into hot, sterilized Jars and seal.
