We never really appreciated plantain when growing up, we always considered them a boring meal when growing up. After discovering the health benefits they are one of my favourites.

We never really appreciated plantain when growing up, we always considered them a boring meal when growing up. After discovering the health benefits they are one of my favourites.
Steps

Peel your bananas and potatoes clean them well and put to boil in salty water for 10 minutes. Then put aside

Fry your onion in a sufuria add 2 chopped tomatoes and let them cook. Add in the plantain and potatoes. Stir them well add chopped corriander and set aside.

For the tripes clean them well and boil for an hour.

Fry your onion add in the tripes and a pinch of salt and stir well. Add your chopped tomatoes and season I used black pepper. Set aside.

Steam your spinach and plate as desired.
