Festive turkey stuffing

I made this stuffing last year for the first time last Christmas and it was so delicious that I'll make it this year too. Getting the ingredients together requires a bit of planning, but the rest is easy and the combination of flavors and textures is really special. An extra plus is that it freezes really well. I'm a firm believer in getting ahead with as much food as possible so that you don't end up spending most of Christmas Day in the kitchen, so I'll be making this probably next weekend, I'll freeze it and just take it out of the freezer and put at the top of the fridge on Christmas Eve so that it will ready to put in the turkey the next morning. Great recipe for Thanksgiving turkey too :-)

Get all the ingredients together

Shred the bacon, celery and onion in a food processor. Put in a large pan over a low heat for 10 minutes, stirring now and again to prevent sticking

Add the cranberries, herbs and cider. Turn the heat up and when it starts to simmer, leave at moderate until the liquid has reduced by half

Roughly chop the cashew nuts, extract the sausage meat and discard the skins and put in a bowl with the breadcrumbs

Squeeze the juice from one mandarine and add to the bowl together with the segments of the other mandarine

Once the liquid has reduced like this, turn the heat off

Add the pan's contents to the bowl and mix well

Store in the fridge or freezer in an airtight container

Or, if you are ready to cook your turkey, start stuffing right away :-)
