simple yet a healthy one pot meal which can be packed for school/Office as well. Coriander has multiple health benefits such as it is a wonderful source of dietary fiber, Iron , manganese etc. It is rich in Vitamin C, Vitamin Ke and protein. Coriander lowers the baad cholesterol (LDL) and increases the level of good cholesterol (HDL). They say it is good for treating Alzheimer’s disease, Coriander is a good food for digestive systems, promotes liver functions and diabetes patients as well as it can stimulate the insulin secretion and lower the blood sugar levels….. And I have used plenty of coriander leaves in this recipe. Apart from all these it contains anti-inflammatory properties and that is why it is good against inflammatory diseases such as Arthritis.

Powder together all the ingredients under the heading “to powder together”, heat ghee in a cooker and add in cumin seeds, curry leaves, powdered masala and let it crackle, now add in chopped onions and fry till translucent

Now add in slit green chilli and fresh green Peas, saute for a while

Add in tomato and saute it again

Add in washed rice & required amount of salt and combine everything well

Now add in 3 cups of water and let it come to boil (you can also use hot water instead)

Finally put coriander leaves and close the lid

Pressure cook till done (one whistle is enough in my cooker), remove from the fire, once it is cooled transfer it to a serving dish, and sprinkle roasted & crushed peanuts

Serve Coriander leaves Pulav with any kind of raita
