Bring the stock to a gentle boil and add fish sauce, soy sauce, toasted sesame oil, noodles and chicken.

Divide soup between two bowls and serve topped with chopped coriander. Serve lime wedges and chilli paste on the side (you can substitute chilli paste with finely chopped chilli if you like).
